Quinoa and cucumber salad


Today we bring you a recipe we tried at home not long ago (in one of those days when autumn gave us a sunny day) and we loved it, so we want to share today.
It is a salad with a food that is increasingly sounding more (displayed on cooking shows, magazines, talk about it on the radio ...), Quinoa.


Quinoa is not exactly a cereal, although its appearance it seems and treated as such. It bears some resemblance to pulses (actually from the botanical point of view is closer to the latter). It is considered a "pseudocereal" (pseudo = false), its nutritional composition reminiscent of rice, for example.

It is sold in bags of half a kilo or a kilo. To prepare it simply has to be cooked in salted water, drain and add a rich dressing. In our case were a few fresh vegetables to take it nice and cool. But you can prepare hot as a soupy stew either or drier.

Quinoa salad

Each serving has 302 calories.
It would be ideal as a first course at lunch or dinner.

INGREDIENTS
- 40 g of raw quinoa
- 1 small bottle of green olives
- 100 g of cucumber
- 1 can of canned red pepper
- 1 tablespoon dessert extra virgin olive oil
- 2 tablespoons balsamic vinegar
- A little bit of salt


ELABORATION
1. Cook the quinoa in salted water for about 15 minutes.
2. In between indicated and seen starting disponlas vegetables in a bowl.
3. Drain the quinoa cooking and add it to the bowl of vegetables.
4. ALINA with extra virgin olive oil, balsamic vinegar and a pinch of salt.
