Mexican zucchini: an easy, healthy and with very few calories recipe


Now I'm trying to lose weight through a much healthier and vegetarian diet (as I have become a vegetarian Mexican but has not been easy, as many of our dishes contain meat) was thinking about what would be the ideal recipe fulfilled with this objective. And of course, it could be nothing more than the famous Mexican Calabacitas, a recipe that my grandmother used to cook and is super easy to do. Here I spend my recipe.

For a ration of 4 people

Ingredients:

3 tomatoes, chopped (or tomatoes as they say in Mexico)

1 / 2 chopped onion

4 medium zucchini, chopped

1 cup cottage cheese

1 pinch of salt

Pepper

Oregano

Thyme

2 teaspoons olive oil

1 cup chicken broth natural or 1 teaspoon powdered chicken broth (vegetable broth for vegetarians)

Process:

Place oil in a pan and add the chopped onion, let it saute and then add the diced tomatoes. Leave the ingredients cooking over low heat until the tomato juice letting go. Then added chopped zucchini. Add the chicken broth. Season to taste with salt, pepper, oregano and thyme. Finally, add the cheese and cook for a few minutes all the ingredients for the mixture acquires taste. That is all!

Once ready the dish, I suggest you eat zucchini with tortillas, like taquitos. Another option is that accompany rice or some meat.
