Vegetables with prawns



Prawns are healthy and low in calories and, if mixed with some vegetables, this dish becomes insanely delicious and healthy.

Ingredients for 2 servings

    1 pepper
    1 courgette
    100 g mushrooms
    1 small onion
    1 sprig rosemary
    5 tablespoons olive oil
    Pepper, salt
    1 can artichoke hearts
    A little white balsamic vinegar
    1 teaspoon vegetable broth
    200 g of prawns
    1 small cos
    1 tablespoon lemon juice

preparation

    Cut the peppers and zucchini. Clean the mushrooms.
    also chop the onions and garlic finely. Wash the rosemary.
    Mix the vegetables, garlic, onion and rosemary with 4 tablespoons of olive oil.
    Echarle pepper to taste.
    Put everything in a roasting pan in the preheated oven (electric oven: 200 ° C) and cook over low heat about 25 minutes.
    Move the mixture when half the time comes, cut the artichokes and add them.
    50 ml of water mixed with vinegar and broth. Wash the prawns and dry them. Fry them in oil for about two minutes.
    Add salt, pepper and lemon juice.
    Board vegetables with salad mixture and serve with the prawns.
